After the Royal Gourmet Cake, we wanted to offer you another traditional French gourmet cake with fruits this time. Here is a FRAISIER, or strawberry cake. This classic French cake is made of 2 cakes, a creamy filling and strawberries of course. We top it with a meringue and glaze. This is truly a fancy cake anyone who likes to bake can do. Bake this cake for a party… they will not believe you made it! This is the type of cake you can easily make for 50 people!

OPERA CAKE

Here is another classic French Gourmet Cake. This one is the Blandine’s favorite. It is made with layers of almond sponge cake soaked in coffee syrup, layered with ganache and coffee buttercream, and covered in a chocolate glaze. The taste is just amazingly delicious! You will of course be using Belgian chocolate and organic decaffeinated coffee so anyone can eat it at any time of the day! This cake will again surprise anyone who tries it. This is also an ideal cake for large parties, quantities can be easily multiplied to feed 50 people! NEW! we have a new non-coffee version as amazing as the coffee one: a Grand Marnier Opera Cake!
Choose which version you want to learn: chocolate – coffee or chocolate – Grand Marnier (non-coffee version). During class, we will give you the recipes for the other version of this cake.

It’s perfect for gifts, keeping in a fridge for up to a year. Dazzle your relatives with your confection perfection in the original recipe, experiment with fun and exciting additions for the family, or just enjoy a batch for yourself!
Learn how to make Dark Chocolate English Toffee, Milk Chocolate English Toffee, Coconut Dark Chocolate English Toffee, and White Chocolate English Toffee with Golden Raisins & cranberries. Work in pairs to create one of the four recipes and then go home with an equal portion of each recipe, totaling over a pound of English Toffee.

FLASH CLASS – COOKIES

Have you been dying to get Blandine’s secret chocolate chip cookie recipe? Here’s your chance in this “FLASH CLASS”. This class will not be a regular event on the calendar so grab it while you can!
Learn how a French lady got a classic American recipe down after years working on it from France! Try some chocolate chips cookies in class as they bake and leave with a batch for home.

Learn to make yule logs just in time for the holidays. A yule log or bûche de Noël refers to log-shaped Christmas cakes. The traditional yule logs are rolled and covered with buttercream but you can now find many different types of more modern versions of the yule logs. Every year, bakeries in France are filled with hundreds of yule logs as this is the very typical Christmas dessert for French people.
You will be making a traditional coffee buttercream log. You will also learn how to do meringue mushrooms for decorations. Leave the class with 1 cute log and meringues. The techniques learned in this class can be used for several other treats. This class only takes place in December.

KING CAKE

To celebrate Epiphany on January 6, French people eat a King Cake, usually made out of puff pastry and an almond cream. The cake has a small cute trinket inside and the person who gets the piece of cake with the trinket gets to be the queen or king!
During this class, everyone will make one 11” King cake for you to take home. Then you will discover the tradition with the group by sharing a cake made by your chef. Note that the puff pastry technique is not taught in this class. This class only takes place in January.

FINALLY- a cupcake class just for adults! Learn how to make buttery vanilla cupcakes and devil’s food cupcakes FROM SCRATCH. You’ll never need a box again with these delicious recipes. You will also make finger-licking homemade buttercreams and practice your fancy-pants piping skills. But that’s not all- we will also make savory cupcakes to enjoy for a meal. During this class, everyone will make Vanilla Cupcakes, Devil’s Food Cupcakes, Lasagna Cupcakes, and Bacon Cheese Cupcakes. You will go home with 12 sweet cupcakes and leftovers of the savory cupcakes.

Laissez les bons temps rouler! or “Let the good times roll!” Come and learn how to make a FAT TUESDAY, Louisiana-approved, KING CAKE!!! Everyone will go home with their own brioche-based cake with a cream cheese praline filling to hide a little plastic baby just in time for the festive Cajun holiday. Why ship one all the way from Louisiana when you can make one right here with our fine European style flour and butter? During this class, everyone will make a 12″ King Cake filled with cream cheese praline decorated traditionally with purple, gold, and green sprinkles. You will receive a plastic baby to put inside after it is baked along with 3 bead necklaces. Please Note: You will not eat a full meal in this class but will get to try a piece of the king cake warmed up while waiting for the dough to proof. This class will only be offered in January and the beginning of February during the days leading up to Fat Tuesday.
